- 1 cup unsalted butter, soft but cool
- 1 ⅓ cups granulated sugar

Instructions
- Preheat your oven to 350°F (175°C).
- In a small bowl, mix together 4 tablespoons unsalted butter, 1/3 cup packed brown sugar, 1 ½ tablespoons flour, 2 ½ teaspoons ground cinnamon, and a pinch of salt until it forms a thick paste. Freeze for about 10 minutes.
- In a large bowl, cream together 1 cup unsalted butter and 1 ⅓ cups granulated sugar until fluffy. Mix in the 1 large egg.
- In another bowl, whisk together 2 ¾ cups all-purpose flour, ¾ teaspoon baking powder, 1 teaspoon cornstarch, and ¼ teaspoon salt. Gradually add to the butter-sugar mixture.
- Fold in pieces of the chilled cinnamon filling into your dough.
- Form balls of dough (about 2 tablespoons each) and place on a parchment-lined baking sheet.
- Bake for 10–12 minutes until edges are lightly golden.
