- 3-4 boneless, skinless chicken breasts
- Lo Mein noodles (fresh or dried)
- 1 red bell pepper
- 1 yellow bell pepper
- 2 carrots (thinly sliced)
- 2 green onions (chopped)
- ¼ cup low-sodium soy sauce
- 1 tablespoon sesame oil
- 3 cloves fresh minced garlic
Instructions
- Prepare all ingredients by chopping vegetables and cooking lo mein noodles according to package instructions.
- In a large skillet or wok, heat sesame oil over medium-high heat and sauté the chicken until golden brown and fully cooked (6-8 minutes). Remove from skillet.
- Stir-fry bell peppers, carrots, and green onions in the same pan for about 3-4 minutes until tender yet crisp.
- Return the chicken to the skillet along with the cooked lo mein noodles, soy sauce, sesame oil, minced garlic, and any additional spices. Toss everything together until well combined.
- Serve hot with optional garnishes such as chopped green onions or sesame seeds.
