- 2 boneless skinless chicken breasts
- 1 avocado, sliced
- 4 slices of cheese (Swiss, cheddar, or provolone)
- 2 tablespoons mayonnaise
- 1 tablespoon Dijon mustard
- 1 small red onion, thinly sliced
- 1 tomato, sliced
- 4 slices of bread (sourdough or ciabatta)
- Olive oil for cooking
Instructions
- Season chicken breasts with salt and pepper. Heat olive oil in a skillet over medium-high heat and cook chicken for 6-7 minutes per side until cooked through. Let rest before slicing.
- Prepare avocado and cheese; set aside.
- Spread mayonnaise and Dijon mustard on each slice of bread.
- Assemble sandwiches: layer sliced chicken, avocado, cheese, red onion, and tomato on two slices of bread. Top with remaining slices.
- Grill in the skillet over medium heat with olive oil until golden brown and cheese melts (about 3-4 minutes per side).
- Serve warm after letting cool for a minute.
