Instructions
- In a non-stick skillet over medium heat, melt the butter. Add the diced potatoes and cook until golden brown and tender, about 10-15 minutes, stirring occasionally.
- In a mixing bowl, whisk together the eggs, milk, salt, and pepper until smooth.
- Pour the egg mixture over the cooked potatoes in the skillet. Cook on low heat while stirring gently until the eggs are just set.
- Sprinkle shredded cheddar cheese on top and let it melt before serving.
