  • 12 oz chow mein egg noodles
  • 1/2 small yellow onion, thinly sliced
  • 5 stalks green onions, cut into 2-inch pieces (whites and greens divided)
  • 2 cups bean sprouts
  • 3 tablespoons corn oil
  • 1 teaspoon sesame oil
  • 2 tablespoons dark soy sauce
  • 1 tablespoon regular soy sauce
  • 1 tablespoon plant-based oyster sauce
  • 1 tablespoon granulated sugar
  • 1 tablespoon water

Instructions

  1. Soak chow mein noodles in boiling water for 30 seconds to 1 minute until softened. Drain and set aside.
  2. In a bowl, mix dark soy sauce, regular soy sauce, plant-based oyster sauce, sugar, and water until sugar dissolves.
  3. Heat one tablespoon of corn oil in a wok over medium-high heat. Sauté onions and white parts of green onions for 1 minute; remove and set aside.
  4. Add another tablespoon of corn oil to the wok, spread soaked noodles into a thin layer, and pan-fry for about 4 minutes until crispy.
  5. Add sautéed onion mixture, green parts of green onions, bean sprouts, and prepared sauce to the wok. Stir-fry for an additional 1-2 minutes.
  6. Remove from heat, add sesame oil, toss gently to combine, and serve immediately.
