- 1 pound lean ground beef
- 1 cup chunky salsa
- 10 ounces red enchilada sauce
- 8 (8-inch) tortillas (flour or corn)
- 8 ounces shredded cheese
Instructions
- Preheat your oven to 350°F. Lightly spray a 9×13-inch baking dish with nonstick cooking spray.
- In a large skillet over medium-high heat, brown the ground beef until fully cooked. Drain excess fat, then return to medium-low heat and stir in the chunky salsa until heated through.
- Pour half of the enchilada sauce into the bottom of the prepared baking dish.
- Warm tortillas according to package instructions. Place about 1/4 cup of meat mixture down the center of each tortilla, sprinkle with cheese, then roll tightly and place seam side down in the baking dish.
- Pour remaining enchilada sauce over rolled tortillas and top with remaining cheese. Cover with aluminum foil and bake for 30 to 35 minutes until heated through.
