  • 1 cup chunky salsa
  • 10 ounces red enchilada sauce
  • 8 (8-inch) tortillas (flour or corn)
  • 8 ounces shredded cheese

Instructions

  1. Preheat your oven to 350°F. Lightly spray a 9×13-inch baking dish with nonstick cooking spray.
  2. In a large skillet over medium-high heat, brown the ground beef until fully cooked. Drain excess fat, then return to medium-low heat and stir in the chunky salsa until heated through.
  3. Pour half of the enchilada sauce into the bottom of the prepared baking dish.
  4. Warm tortillas according to package instructions. Place about 1/4 cup of meat mixture down the center of each tortilla, sprinkle with cheese, then roll tightly and place seam side down in the baking dish.
  5. Pour remaining enchilada sauce over rolled tortillas and top with remaining cheese. Cover with aluminum foil and bake for 30 to 35 minutes until heated through.
